The one that started this series. Our beloved basketball writer, Patrick Gerhart, dropped this recipe in our slack chatroom and my idea for this series sprouted. I have asked for “Nebraska Inspired Recipes” three times and now the list is up to 11 recipes. Do not be afraid to send some more in.
My Process
It was actually pretty simple.
Make some meatballs. Brown them in a pan. Then place the browned meatballs in a baking dish. Mix some Dorothy Lynch and Cream of Mushroom Soup and then pour it over the meatballs. Bake for 30 minutes at 325, then pull it out put slices of swiss cheese over the top and put it back into the oven. Wait until the cheese melts, then serve.
While I have eaten my fair share of meatballs, I have actually never made them myself. I’ve read recipes for meatballs but this one seemed to be a little different.
Yes, the filling with the hamburger had egg. That’s normal (at least to my knowledge). Sometimes there is bread and milk I think.
This recipe had sauerkraut and minute rice.
And it was good.
Dorothy Lynch. How was that?
It was fine. I actually don’t know if I’ve ever used Dorothy Lynch in my life but if you’re going to try Dorothy Lynch then you might as well pour them over some meatballs. I guess.
Overall
I would give it 3.5/5 stars. It was good. Do I think we would ever make it at home again? Probably not because that means we would have to buy more Dorothy Lynch.
One take away from this is that I really liked the meatballs by themselves. I would likely try and find a sauce of some type to pour over them still but it likely would not have Dorothy Lynch.
It’s funny how different my picture looks compared to the picture on the recipe. The recipe doesn’t ask for anything green (like I assume parsley) but there is some in the picture. Also my swiss cheese had the stereotypical holes.
Verdicts of the Others
One year old: She did eat the meatballs.
Three year old: “They are super yummy. We ate them at that time at daycare yesterday. And I like milk and chocolate milk. And I like strawberry milk. And I like pizza. And I like green beans and corn and popcorn...”
Six year old: “It’s yummy with ketchup, but not without ketchup.
Wife: “I was pleasantly surprised how the flavors came together. Kind of sweet and the savory. But the sweetness from the Dorothy Lynch kind of gets old. Seems like a fun dish to make for a potluck.”
