With a new week brings a new “Nebraska Inspired” recipe.
This was was also submitted by a reader, and among the recipes I have reviewed thus far it was by far the easiest to make (and thus, not screw up).
The reader who submitted the recipe wanted it to be called “The Blackshirt Special.” What are the ethnic origins? Possibly desperation?
What do I mean by desperation? Some of the greatest meals, probably all of the greatest meals were likely created by people who were desperate. What do you have to use? Well whatever it is use THAT.
And you get recipes like spaghetti with meat sauce.
Or in this case, you could have gotten “The Blackshirt Special.”
The Process
Opened a package of 1.5 lbs of chicken tender (uncooked) and placed them in a baking dish.
Then in a large bowl I combined the following ingredients. Two cans of cream of mushroom soup, one can of Campbell’s golden mushroom soup, one pint of sour cream and a cup of Chardonnay.
Pour the mixture over the chicken. Sprinkle some cayenne over the top and place it in the oven for 90 minutes.

Overall
The best part about this dish was how simple it was to make. Drop some chicken in a dish. Mix five or six ingredients together. Drop it in the oven (nicely though, because you don’t want to break the dish) and wait 90 minutes.
Start with the critical portion. The chicken ended up being really dry. That is our only criticism.
Because we really liked the sauce or gravy. We have a large mason jar full of the leftover sauce, and I’m not sure what we plan on doing with it yet. Throw it on some pasta? Cook some chicken thighs and dab it over the chicken?
The sauce reminds me of a thicker version of Hungarian Mushroom soup. That soup is so good.
Regardless I hope somebody tries this Bo Pelini Special!

Verdict from the Others
The Wife: “I think it is great. I would use more chicken because there is so much sauce. I don’t even like mushrooms and I like the flavor. You could bottle that sauce. It is kind of addictive but not over powering.”
Six Year Old: “It’s good with ketchup.” We asked him what he thought of it without ketchup, and he just gave the sideways thumb like from The Gladiator.
Three Year Old: Gave a thumbs up.
Here’s the Recipe
2 cans Cream of Mushroom soup
1 can Campbell Golden Mushroom soup
1 pint Sour Cream
1 cup white wine (I use chardonnay)
Mix in bowl
Pour over chicken breasts in casserole dish (I use about 1.5 lbs of tenderloin cut chicken)
Lightly dust top with cayenne pepper
Cook in preheated oven at 350 for 90 minutes
Serve over white rice. I serve dinner rolls and a Caesar salad with it. I also shovel the gravy and rice onto dinner roll.
Absolutely nothing Nebraska about it, but it’s good.
