I love this in the fall, watching football accompanied by a cold Sam Adams Oktoberfest. As a bonus, I'm the only one in my house who likes sauerkraut, so there are always leftovers for me. The beer never makes it past Saturday night, though.
Ingredients:
1 tube (13.8 oz.) refrigerated pizza crust
1 lb. Bratwurst -or- 1 lb. Polish Sausage or Polska Kielbasa
2 tsp butter
2 cups leftover or refrigerated mashed potatoes
1 cup sauerkraut, rinsed and well drained
1 cup (4 oz.) shredded cheddar cheese
1 tsp caraway seeds
Directions:
Unroll the dough into a greased 15-in. x 10-in. x 1-in. baking pan. Flatten the dough and build up the edges slightly. Bake at 425 for 8-10 minutes or until lightly golden brown.
Meanwhile, prepare the meat. For bratwurst, remove bratwurst casings and discard. Brown and drain the meat in a skillet as you would ground beef. For polish, slice into 1/4 in. pieces, fry and drain.
Spread mashed potatoes over crust. Top with sauerkraut, bratwurst, cheese and caraway seeds. Bake for 10-15 minutes until golden brown.
