I love Chipotle, and I especially love their corn salsa. My sister-in-law knew this, and sent me the following recipe. I make it a lot. I usually make fish tacos to go with it, but it would be lovely as a conventional salsa at any sports-watching gathering as well.

Ingredients:
1 c. corn (I usually use frozen corn, because canned corn grosses me out, and I usually just use all of the smallest bag I can find. Cook it or thaw it before putting it in the salsa though.)
1/2 c. diced red onion
1 c. peeled & chopped jicama (If you don't have jicama, feel free to omit it. But it provides a delicious and satisfying crunch, so give it a whirl if you can.)
1/2 c. diced red bell pepper
1 c. fresh cilantro leaves, chopped
1 lime (or a few squirts of lime juice)
Directions:
1. Mix everything together.
2. Eat with conveyance method of your choosing (taco, tortilla chip, spoon, whatever.)
