Requests, For Recipes

Iv'e been doing the Off Season Recipes for about 24 weeks now and it's been a lot of fun. I just want to get a feel of how you, the people of Corn Nation, are leaning towards recipes. Is the smoked recipes the way to go or is there something different you would like to see done? I love cooking in the smoker and trying different things. If there is a recipe you would like to see, or a certain food you would like to see smoked, or grilled, just  let me know. If you have a suggestion, post it and the most suggested one, is the one I'll do! Just trying something new here, so let's hear it!!

Sadly don't have a smoker

So I’d love to see some more variety!

I don't have a smoker

but I DO have a charcoal grill – a good Weber. Thoughts on how we might carry out some of the smoker recipes in a regular charcoal grill would be awesome.

They have

whats called a smoke box that you fill with wood chips and place inside the grill as you’re cooking. I’ve used one many times and it works pretty good.

You can.

I had a Weber kettle grill before I bought my smoker. The first thing I did was smoke a pork butt. It turned out great, you just have to make sure you have moderate heat and put it on the opposite side from the meat.
I even got the traditional “smoke ring” from it.
Also, if you can find these little smoke-cans they sell now, buy them. They are by far the easiest thing to use, and the smoke last for about an hour per can. Looks like a can of tuna.

You can do some smoking on a regular grill

It’s not optimal, but if you are careful, you can do it. I’ve done some very fine pork loins on my gas grill… I only use one burner and add wood chips in a foil packet plus a pan of water…

This guy I know

makes these things he calls dinosaur eggs. He spreads cream cheese into half a jalapeno pepper and then wraps the pepper and cream cheese in ground sausage and smokes it. I don’t know for how long though. Very very tasty!

I've got

a jalapeno recipe that’s similar to that but have never tried smoking them. That sounds like a good thing to try someday!

 looking for something specific or a genre?

I’ve given up cooking. It used to be something I enjoyed. I’m not really sure if I was ever that good at it anyway. But between this site and raising teenagers….. I’ve barely cooked anything for a couple years.

I used to do a lot with peppers, hot peppers. Salsas….. in fact, one time I did a saviche’ – with crappie. my neighbors, raved about it for about 30 minutes. Then they asked what that white meat was – when I told them it was crappie, i might as well have murdered them.

Here was a food that they thought was so wonderful until it went against their normalcy for cooking it. All crappie should be fried. Forever.

Funny how food goes.

This is all reminding me

that someone should get a CornNation tailgate going one gameday. Bring that 10lb brisket, and we can all take care of it!

I have a great smoked-cured salmon recipe. Even people who hate fish admit it’s damn good. Of course, salmon is a bit more like steak than most fish.

I am

going to try that meatloaf thing today except I’m using 1 Lb hamburger and 1 LB venison sausage (our own recipe, hot hot hot).

I’m hoping my smoker actually works, I haven’t used it in forever.

Hey guys, please help me! I need to learn how to do a GOOD runza! I left Nebraska for the Marines 15 years ago and ended up in Houston Texas. I’ve tried a couple of times, but it’s just not the same as what I crave and miss so much!

I know you all are talking about smoking and grilling, but if anybody’s got a good family recipe or could throw me a link to a good, old fashioned, real Nebraska style runza recipe that would be awesome! I’m a member of Houstonians for Huskers so I will share with real good people that really miss the true beauty of a Runza!
